After the set-up of the microbrewery at BDI Biotechnology facilities, firsts productions are running in order to evaluate the brewing fermentation process when using the yeast extract produced in the previous activities of the LIFE YEAST project as fermentation booster. The fermentation efficiency of the brewing process will be compared when using the commercial yeast extract. The use of yeast extract in the brewing process would allow us to complete the cycle of circular economy: use coproducts from the fermentation to start the next fermentation process.
